- Reply as the owner by name — diners trust 'Maria, owner' over a brand voice
- One sentence of context (load-shedding, short-staffed) is human; three is excuse-making
- Never dispute what someone tasted — dispute bookings and facts, not palates
- Invite them back specifically; 'come try the new winter menu' beats 'we hope to serve you again'
